Rainbow Toast Points with Ricotta Cheese and Tropical Granola
1 slice whole grain bread, lightly toasted
1 Tablespoon part-skim Ricotta cheese
2 teaspoons fresh blueberries
2 teaspoons fresh blackberries
2 teaspoons fresh raspberries
2 teaspoons fresh peach (peeled, pitted and finely chopped)
2 Tablespoons Golden Girl Tropical Granola
Slice toasted bread diagonally. Place on a small plate. Spread 1 1/2 teaspoons Ricotta cheese over each toast point.
Combine blueberries, blackberries, raspberries and peaches in a small bowl and toss to blend. Scatter half of the fruit mixture over each portion of cheese. Scatter one half of granola over each portion of fruit.
Serves one.
This is a versatile recipe. It can be served as breakfast, a light lunch or a snack.
If you are concerned about calories it can be served in a bowl without the bread.
